Bioprocessing of pineapple waste biomass for sustainable production of bioactive compounds with high antioxidant activity

Abstract The effect of temperature, moisture content and pH during solid-state fermentation (SSF) MD2 pineapple peel with Rhizopus oryzae (MUCL 28168) was evaluated on the release bioactive compounds antioxidant capacity. Applying a central composite design, it found that temperature had significant (p < 0.05) total phenolic DPPH activity while for ABTS radical elimination activity, factor presented 0.05); as this increases, enhances. optimal conditions process were 80% content, 5.5, 37.3 °C 24 h to maximize activity. Gallic acid, chlorogenic caffeic acid cinnamic identified in extracts by HPLC analysis. These results permit conclude SSF is an effective bioprocess Graphical abstract
